For Reach the Beach I made cookies that I dubbed the “Relay and Rally” cookie. I simply took a traditional Chocolate Chip Cookie recipe and made a variety of substitutions to create the perfect runner fuel for a 200 mile relay. They were a big hit with the runners in my van and I made so many I was able to pass them on to the girls from the New Balance #TeamPumpedUpKicks.
I thought you might like to give then a try too!
Relay And Rally Cookies
1/2 cup quick oats
2 1/4 cup flour (mix of white and whole wheat)
1 1/2 tsp. baking soda
1 tsp. salt
1/2 cup Health Warrior chia seeds
1 cup chopped walnuts
3/4 cup shredded coconut
1/4 tsp. cinnamon
1 cup coconut oil
1/3 cup brown sugar
1/3 cup white sugar
1 1/2 tsp. vanilla
2 eggs (Pete and Jerry’s Organic eggs of course!)
16 oz bag mini dark chocolate chips
Preheat oven to 350.
1. Mix wet and dry ingredients in separate bowls.
2. Slowly add dry mixture into wet. Stir in chocolate chips and mix thoroughly.
3. Spoon dough on to non-stick or greased cookie sheet.
4. Bake for 12 minutes at 350.
Refuel and enjoy!

There’s totally room for flax or hemp seeds or really anything else! Maybe a little ginger. The possibilities are endless!
